Courtesy of Slane Irish Whiskey, this recipe adds a unique touch to the classic drink by swapping regular sugar for house made Demerara syrup. Additionally it boasts a generous garnishing of dark orange chocolate. Step-by-Step
- Gather all ingredients
- Make the Demara Syrup, double espresso and dark orange chocolate garnish. Set ingredients aside
- Heat a 6oz Georgian glass with boiling water. Once heated remove the water.
- Add liquids to the heated glass: 1oz of Slane Irish Whiskey, house made demerara syrup, made double espresso.
- Top mixture with 1oz boiling water and stir.
- Make the heavy cream float. Use a bar spoon to gently float the heavy cream on the surface of the coffee.
- Garnish 1 tbsp orange dark chocolate shavings

Ingredients
House-made Demerara Syrup:
- 1 cup Demerara sugar
- 1 cup water
- 1 Madagascan Vanilla bean
Heavy cream float
- Heavy cream
Dark Orange Chocolate Shaving
- Dark chocolate bar
- Orange zest
Distillery Irish Coffee
- 1oz Slane Irish Whiskey
- 1oz house-made demerara syrup infused with vanilla pod*
- Double espresso (slightly topped with boiling water)
- 1.5oz heavy cream float
- 1 tbsp orange dark chocolate shavings
- 1 dark chocolate piece ( optional)
Instructions
House-made demara syrup
- Begin by splitting the vanilla bean in half lengthwise with a sharp knife.
- Add the Demerara sugar, water, and split vanilla bean to a small saucepan.
- Heat the mixture over low heat, stirring constantly, until the sugar is completely dissolved.
- Once the sugar is dissolved, continue to heat the mixture for another 5-10 minutes to allow the vanilla flavor to infuse into the syrup.
- Remove the saucepan from the heat and let the syrup cool to room temperature.
- Once the syrup is cool, remove the vanilla bean and transfer the syrup to a glass jar or bottle.
- Store the syrup in the refrigerator for up to a month.
Heavy Cream Float
- In a separate bowl, whip the heavy cream until it reaches a thick and creamy consistency.
- Using a spoon, gently pour the whipped cream over the top of the drink or dessert. Be sure to pour the cream slowly and gently to allow it to float on the surface of the liquid.
Dark orange chocolate shaving
- Begin by using a vegetable peeler or sharp knife to shave thin strips of dark chocolate from the chocolate bar. You can also use a grater with large holes to create smaller, finer shavings.
- Next, use a microplane or zester to remove the zest from an orange. Be sure to only remove the outermost layer of the orange peel, as the white pith underneath can be bitter.
- Mix the chocolate shavings and orange zest together in a small bowl.
- Sprinkle the chocolate and orange zest mixture over the floating cream in Irish Coffee

- Heat a 6oz Georgian glass with boiling water (approximately 1 minute and then empty)
- Add 1oz of Slane Irish Whiskey and demerara vanilla syrup to the heated glass.
- Add freshly made double espresso to the glass and top slightly with 1oz boiling water and stir.
- Use a bar spoon to gently float the heavy cream on the surface of the coffee.
- Top dark orange chocolate onto cream float and serve with dark chocolate piece.
